Bourgogne Blanc This vineyard is 2.64 hectares in size. From grape cultivation to aging, everything is done the same way as in Meursault with the only difference being the shorter length of time of barrel aging on lees. The vineyard is adjacent to the Meursault appellation. This wine is perfectly weighted, complex, approachable and elegant. It is initially subdued on the nose but as it warms, there are lovely aromas of stonefruit, toasty bread and brioche. Generous sweet and creamy flavors on the mouth with a buttery softness before a drying and long finish. ■ Grape Variety 100% Chardonnay |

Meursault Les Luchets This 1.03 hectare vineyard is 280 meters above sea level. As one climbs the slope, the soil changes from clay to a limestone layer. This change in the soil is also reflected in the wine. This pale colored wine has lovely stony, limey and granite scents. Showing subtle flavors of lemon, vanilla and other oak spices, it opens up well in the glass. It is direct and pure with a long and intense finish. Meursault Les Tillets This 0.49 hectare in size, south facing vineyard is situated near the crest of the hill, 320-340 meters above sea level. One can see many small, light round stones on the soil in this section of the slope. This wine is a pale lemon color with concentrated smoky mineral notes. It is a beautiful Meursault from high on the slopes. It is steely, stony and long flavored with great verve and minerality. This solid bodied wine can be aged for a long time. ■ Grape Variety 100% Chardonnay |

Meursault Tessons Clos de Mon Plaisir This 0.85 hectare vineyard is similar to Les Luchets in that it is situated in the center of a hill, but more southerly. This wine is both rich and elegant. It could definitely be said that this is one wine where the characteristics of this appellation are truly expressed. It is the only domaine to have a 2.1 acre “mon plaisir” enclosed vineyard. This wine has a flowery nose with nuances of oak and hazelnuts. It has a bit of sweetness on the palate with nice ripe fruit and lots of freshness. Round and elegant, this is a powerful and full flavored wine with a long, refreshing finish. ■ Grape Variety 100% Chardonnay |

Meursault 1er Cru Les Perrieres This 0.26 hectare vineyard has the name Les Perrieres which comes from “perriers”, the early name for stonemasons who worked near the quarry. The minerals and rocks influence the flavor of the wine and it features a robust backbone and intensity, however these characteristics are not heavy in the slightest. It has the typical aromas of this appellation: flowers, fruits, spice and stones. This wine has a complex aroma of fresh, lively fruit with a delicate mineral creaminess. The palate is refined with an elegant minerality that continues on into a wonderfully long finish. ■ Grape Variety 100% Chardonnay |

Fine de Bourgogne Fine de Bourgogne is a spirit distilled from the sediment that is left in the barrel after the maturation of wine. It is made from the sediment of wine made from each of the Domaine Roulot appellations; Bourgogne Blanc, Bourgogne Rouge, Meursault, Monthelie and Auxey-Duresses. After maturation, the sediment is stored in barrels and distilled during the winter season. When the distillation process has finished, the alcohol is moved to new barrels where it is aged for at least ten years. This allows for the development of the beautiful amber color of this Fine de Bourgogne. It is bottled at the domain after maturation. |

Marc de Bourgogne This rich, tawny colored Marc de Bourgogne is made from the distilled lees, or “marl” (residue left in the press after juice has been extracted from the grapes) from the grapes picked from every single vine on each of Domaine Roulot’s vineyards (Bourgogne Blanc, Bourgogne Rouge, Meursault, Monthelie and Auxey-Duresses). More than 80% of white wine marl is used along with a small portion of red wine marl which is the same ratio as the Domaine’s red and white wine vines. After each press is finished, all of the marl is collected and put in a fermenter. After fermentation, it is stored out of contact with the air and distilled throughout the winter period before being moved to new barrels. The aging and bottling process is carried out in exactly the same manner as Fine de Bourgogne. |
