I Custodi delle vigne dell’Etna

I Custodi are the keepers, the guardians of Mt. Etna’s vineyards: to guard means to preserve the land, to maintain the traditions and to respect the people. From these values and from the love for a beautiful land, where the vine was brought by man more than two millennia ago, spring the wines of I Custodi, the result of the generosity and the minerality of the warm volcanic soil, the cold of the Muntagna and the sun of Sicily. Healthy vines of all ages, growing densely on ancient dry stone terraces, supported by their stake in chestnut wood, are cultivated in harmony with the environment that surrounds them - only by manual labor and with the help of Ciccio the mule - by I Vigneri, skilfull Etnean winegrowers. Winegrowing as it has always been on Mt. Etna for centuries, without synthetic chemicals, in respect of the people, the landscape and the nature.



Alnus Etna Rosato DOC
Alnus Etna Rosato DOC

Varietals: Nerello Mascalese (80%), Nerello Cappucchio

Age of vineyard: 10 years. Altitude: 650m asl.
Terroir: Sandy, Volcanic, very rich in minerals, with subacid reaction.

Vinification: The grapes are harvested and selected, brought to the winery in shallow crates, where the whole clusters are soft-crushed. The old technique of the “pista e mutta” is applied: the must is separated from the skins after a very short maceration. Fermentation at 20-25 °C.

Maturation: in concrete vats for about 5 months.

Tasting - Eye: rose with light ruby glares
Nose: Floral, with fresh notes of strawberry and raspberry.
Palate: Dry, harmonic, spicy, pleasant acidity.

Pistus Etna Rosso DOC

Varietals: Nerello Mascalese (80%), Nerello Cappuccio

Age of vineyard: 10 years. Altitude: 650m asl

Vinification: The grapes are harvest and selected, brought to the winery in shallow crates, where the whole clusters are soft-crushed. Maceration for about a week in concrete vats.

Maturation: In concrete vats for about 9months.

Tasting - Eye: red with bright ruby glares.
Nose: fresh, fruit, floral.
Palate: elegant, harmonic, pleasant tannins, good acid persistance.

Ante Etna Bianco DOC 2009

Varietals: Carricante (70%), Minnella, Grecanico

Age of vineyard: Up to 40 years / Altitude: 850 and 1.200 m
Terroir: Sandy, volcanic, very rich in minerals, with subacid reaction.

Vinification: The grapes are harvested manually and selected, brought to the winery in shallow crates, where the whole clusters are soft-crushed. Fermentation in steel vats at 20 °C.
Maturation: Circa 12 months in the same steel vats.

Tasting notes
Eye: greenish straw yellow.
Nose: fruity with hints of aniseed.
Palate: dry, harmonic, good structure, rightly acid.

Aetneus Etna Rosso DOC 2007

Varietals: Nerello Mascalese (80%), Nerello Cappuccio, Alicante

Age of vineyard: Up to 150 years / Altitude: 750 m amsl
Terroir: Sandy, volcanic, very rich in minerals, with subacid reaction.

Vinification: The grapes are harvested manually and selected, brought to the winery in shallow crates, where they are crushed after destemming about 80% of the clusters. Maceration for 12 days in steel vats.
Malolactic fermentation in small barrels.

Maturation: In used and semi-used barriques for at least 24 months.

Tasting notes:
Eye: ruby red.
Nose: ethereal, intense, hints of ripe fruit and tobacco.
Palate: elegant, harmonic, considerably long aftertaste, rightly tannic.
