Domaine de MajasThe grapes used for white wine are harvested during the morning to preserve their freshness and are pressed after destemming. Debourbage is lightly carried out and then the juice is fermented using natural yeasts in temperature controlled conditions. For red wine grapes, the grapes are destemmed then put into old concrete tanks and fermented using natural yeasts. The thickness of the tank ensures that changes in temperature are kept to a minimum. The use of sulfurous acid is also at the absolute minimum and is only used when it is needed to safeguard against damage to the quality of the wine. The wine is lightly filtered before bottling however there may be some instances where lees can be seen in the bottle so it suggested that the wine be poured into a carafe before serving. The "three trees" label design was designed by a famous Japanese artist using the kanji character "森". Incidentally, Japan was the first country to start importing the wines of Domaine de Majas. "森" also denotes "life". On the back label, the phrase "eat, drink and dance" is written so we are reminded that wine is a thing of pleasure. |

Three Trees le Cayrol
Grown in clay, limestone and schist with a yield of 38 hectoliter per hectare, the vines are about 35 years old. Certified by Ecocert, this vineyard changed to organic cultivation in 2007. All harvesting is done by hand and no oak barrels are used in the winemaking process. Grapes are fermented using wild yeast in temperature controlled conditions then matured on lees in tanks. This wine is a bright and beautiful pale yellow color with floral and fruity fragrances of white peach and lemon. It is a fresh and very aromatic wine with lovely minerality, with an extremely delicate and long back palate. This wine can be enjoyed as an aperitif, with shellfish and fish dishes, foie gras and white meat dishes as well. This is best served at between 10-12 degrees and should be consumed within 3 years. ■Grape Varieties Macabeu 50%, Rolle 50% ※Cepage varies slightly according to vintage. |

Three Trees Cougoumeilles
20-50 year old vines are grown in clay, limestone and schist with an average yield of 40 hectoliters per hectare. Grapes are harvested by hand and all destemmed before fermentation using wild yeast. Traditional maturation in tanks with no use of oak barrels. This wine is a brilliant ruby color with fresh fragrances of mulberry and cherry. Tannins are blended with concentrated fruit flavors, black fruits and beautiful minerality. This wine can be enjoyed with red meat dishes, and cheeses such as Raclette. This wine should be served at around 16-18 degrees and should be consumed within 5 years. ■ Grape Varieties Carignan 55%, Grenache Noir 45% ※Cepage varies slightly according to vintage. |

Three Trees Majas 35 year old vines are grown in clay, limestone and schist with a yield of around 30 hectoliters per hectare. Grapes are harvested by hand and all destemmed before fermentation using wild yeast. Traditional maturation in tanks with no use of oak barrels. This wine is almost black with tinges of deep ruby red and fragrances of red fruits and cassis buds. Tannins blend with concentrated fruit flavors and a touch of spice leaving a lovely aftertaste. Enjoy this wine with game, red meat dishes and cheese. Serve between 16-18 degrees. This wine should be consumed within 5 years. ■ Grape Variety Syrah 100% |
