Spellbound Chardonnay

The 2009 Spellbound Chardonnay features bright and lush tropical fruit flavors such as pineapple, banana, guava, and kiwi. These bright favors are balanced with notes of vanilla and classic creme brulee. Enjoy this wine on its own or with a variety of cuisine from the Pacific Rim to the fiery Southwest. “Aging and fermentation take place in small oak barrels, which are the key signature to the wine. The oak works to call forth the density and complex oak characteristics of fresh vanilla bean and luscious creme brulee. To maintain the crisp fresh fruit acidity within the wine, we ferment nearly ten percent of the wine in stainless steel. Everything about making Varietal Blend 97.3% Chardonnay, 2.7% other proprietary white Chardonnay is lively-the vibrant color, richness of flavors, and perfect balance. I guarantee this is a wine that will leave you Spellbound.”

Spellbound Cabernet Sauvignon

We look for the grape’s maximum maturity by sampling and tasting grapes in the field, technical information is not enough, we must taste to determine the magic moment of harvest. For Spellbound optimal ripeness means that the grapes are bursting with flavor yet they still retain crispness. Timing the harvest is key, as perfect ripeness provides richness of black fruits and beautiful balance in the wine. Fermented in stainless tanks then aged in 90% French and American oak. Our Spellbound Cabernet Sauvignon showcases lush texture and bold dark fruit flavors with a slight hint of oak and spice. Cedar and tobacco aromas complement integrated lively tannins and fill out your palate, allowing the wine to be consumed on its own or with your favorite food. The Spellbound Cabernet Sauvignon continues to be one of our shining stars because of the wine’s balance and intensity of flavors.

Spellbound Merlot

At harvest we look for lush plump berries as they lend themselves to creating soft friendly tannins and opulent balanced berry flavors in our Merlot. The larger berries tend to have more approachable rounded flavors which is a key stylistic signature of Spellbound. We look for the grape’s maximum maturity by sampling and tasting grapes in the field, technical information is not enough, we must taste to determine the magic moment of harvest. For Spellbound, optimal ripeness means that the grapes are bursting with flavor yet they still retain crispness. Timing the harvest is key, as perfect ripeness provides richness of black fruits and beautiful balance in the wine. Fermented in stainless tanks and aged in 20% new French and American oak. Our Merlot is approachable, yet deeply rich with berry and oak flavor, providing satisfaction with every glass. The Spellbound Merlot was created to demonstrate the dark yet playful fruit profile of Merlot with its’soft fruits and aromatics of mulling spice, fresh cedar cigar box and decadent leather. You will find bright fruit mingling with a classic signature of toasted Madagascar vanilla bean and French oak. Our dark, juicy, plush wine style continues here with soft tannins that gently caress while the brambly fruit and oak character manifest in every glass.

Petit Sirah

Petite Sirah is a dark and brooding grape varietal. The texture and tannins come directly from the skins and as a result-the Lodi and Central regions of California were chosen as a grape source for the 2009 Spellbound Petite Sirah. The rich soils in this area allow the vines to produce slightly larger berries-and the larger berries produce a high juice-to -skin ratio. This is very important because the tannin profile is reduced while the dark, luscious, and juicy fruit remains the prominent figure of Spellbound. Fermented in stainless steel and aged in 90% French and American oak barrels. Intensity of color, rich black and brambly fruits, vanilla bean and roasting coffee aromatics are complimented by remarkable approachability in the 2009 Spellbound Petite Sirah. The wine is crafted to unleash dark and luscious characteristics, while managing tannins to deliver an opulent and juicy Petite Sirah. This lush yet easy drinking wine provides intense berry character, with superb texture you will find in no other Petite Sirah but Spellbound.
