■ Grape Variety
100% Chardonnay This classic Blanc de Blancs uses Chardonnay grapes selected predominately from the Grand Cru vineyards in the Cote des Blancs: Cramant, Le Mesnil, Oger , Avize, and Oiry.
■ Wine-making and Maturing
Essentially only cuvee is used. Once the must has been clarified, the wine is fermented in strictly temperature-controlled stainless steel tanks, thereby preserving the aroma and fruity characteristics. The wine is then aged in the deepest, low temperature underground cellar in Epernay for a minimum of three years. Rumuage is carried out manually by a specialist craftsman and after dosage (about 11 grams to a liter) it is left to settle until adjustment is complete before shipping.
■ Tasting Notes
Clear golden-yellow with hints of green. The lucent bubbles stand with great momentum. It has a very complex nose with mushroom, violet, licorice, brioche and almond. The secondary aroma shows musk, leather and iodine. This is the characteristic of a superior chardonnay. The palate is a balance of richness and intensity and it shows a fresh fruitiness in its firm structure. This champagne allows one to enjoy the changes in aroma and flavor with all five senses.
